Slammin' Sweet Potato Pie

This Ain't Patti's Store Bought Joint Either!

Ingredients

  • 2 cups sweet potatoes (mashed)

  • 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 tsp allspice

  • 1/4 tsp + pinch salt (I used table salt)

  • 1.5 Tbsp lemon juice (start small and add to taste)

  • 1.5 tsp pure vanilla extract

  • 1/3 cup half n half (room temp)

  • 2 eggs (room temp)

  • 1 Tbsp flour

  • 4 Tbsp unsalted butter, melted

  • 1 Deep dish pie shell (I used Mrs. Smith 9" deep dish flaky pie crust)

Directions

Step 1.

You'll need 2-3 medium sized sweet potatoes (roughly 2.5 lbs). Bake potatoes at 425°f for 1 hour or until tender.

Step 2.

Let cool completely then smash with a masher or fork.

Step 3.

Measure out 2 cups of sweet potatoes in a glass measuring cup.

Step 4.

Blend on medium speed for 4-5 minutes to get smooth creamy texture.

Step 5.

Remove any potato strings from blender, then add other ingredients. Mix well to combine. Don't overmix after adding the flour.

Step 6.

Bake on 350°f for 40 - 50 minutes.

Step 7.

Pie will be slightly jiggly in the center. Let set for a couple of hours.

Step 8.

To bake pie shell, set oven to 375 and bake until crust reaches desired crispness. All ingredients should be at room temperature. Taste it as you make it. Enjoy!

Old School Caramel Cake

Ingredients

(FOR CARAMEL ICING)

  • 1 cup heavy cream

  • 11 oz caramel candies

  • 1/4 tsp salt

  • 1 tsp vanilla

    (FOR CREAM CHEESE ICING)

  • 2 (8oz) sticks butter

  • 8 oz cream cheese (room temp)

  • 4 cups powdered sugar

  • 1 tsp vanilla

    (CAKE INGREDIENTS)

  • 3 cups all purpose flour

  • 1 cup granulated sugar

  • 2 1/4 tsp baking powder

  • 1/2 tsp salt

  • 3/4 cup vegetable oil

  • 1 1/2 cup whole milk(room temp)

  • 1 tsp vanilla

  • 3 whole eggs (room temp)

  • 1 cup caramel icing

Directions

Step 1.

Slowly melt ingredients for caramel icing (1 cup of heavy cream, 11 oz caramel candies, 1/4 tsp salt and 1 tsp vanilla) together and let cool

Step 2.

Mix/Melt cream cheese icing ingredients 2 (8oz) sticks butter,8 oz cream cheese (room temp), 4 cups powdered sugar,1 tsp vanilla together and let cool.

Step 3.

Mix cake ingredients (dry)-- 3 cups all purpose flour, 1 cup granulated sugar, 2 1/4 tsp baking powder,1/2 tsp salt-- together in large bowl.

Step 4.

Add 3/4 cup vegetable oil ,1 1/2 cup whole milk(room temp),1 tsp vanilla, 3 whole eggs (room temp), 1 cup caramel icing to dry ingredients and mix well.

Step 5.

Pour in 2 8 in cake rounds and bake on 350 degrees for 25-30 minutes Let cake cool completely.

Step 6.

Frost cake with cream cheese icing and remaining caramel icing.

Classic Banana Pudding

Ingredients

  • 8 oz whipped cream cheese

  • 6 bananas

  • 2 boxes nilla wafers

  • 14 oz sweet condensed milk

  • 4 cups whole milk

  • 1 box vanilla jello

  • 1 box banana cream jello

  • 1 tbsp vanilla extract

  • 1 container cool whip

Directions

Step 1.

In a mixing bowl add cream cheese. Next, add in sweet condensed milk and mix.

Step 2.

Add in vanilla and banana cream jello packets, vanilla extract, and milk. Blend with hand mixer until fully mixed.

Step 3.

Add in cool whip and stir until fully mixed.

Step 4.

In a baking dish, add a layer of Nilla wafers then add in a layer half a bowl of pudding mixture.

Step 5.

Add in a layer of bananas and more cookies. And add the last half of pudding mixture.

Step 6.

Top the pudding with more cookies.

Step 7.

Cover with aluminum foil and let sit in fridge for at least 5 hrs (better overnight)
